Bánh cuốn (rolled rice pancake)

Bánh cuốn is the members of noodle family. Like all the rolled things, Bánh cuốn is rolled with minced pork and mushrooms. The cover of bánh cuốn is the paper-thin steamed rice flour pancake.

To serve bánh cuốn, put 2 or 3 rolls on the dish, cut into bite sized sections and top some fried shallots and fresh herbs such as cilantro or Vietnamese basil.
To eat bánh cuốn, dip a section of rolled noodle goodness into the accompanying fish sauce, brightened with a squeeze of fresh lime.

Bánh cuốn are often eaten with chả quế (roasted cinnamon sausage), nem (fermented pork dish) and bánh tôm (fried shrimp pastry)
